WINEMAKING
Process
Each variety was harvested in the cool of the night when showing their most
elegant fruit flavours. Following crushing, the free run juice was separated
immediately to retain that freshness, and only that portion was used to make
these wines. Fermentation proceeded at cool temperatures around 12-14°C
until dry. Blending did not occur until after both wines were stabilised and
filtered to show their best varietal characteristics.
