DESCRIPTION Colour Attractive bright green/gold hues Aroma Lifted herbal and spice notes, overlain with hints of citrus, melon and white peach Palate A richly flavoured mid-palate shows white peach characters layered with citrus and guava overtones. A touch of allspice character balances nicely with a hint of apricot. An excellent example of the modern finer styles of Australian Chardonnay blends. Varietal Composition 80% Chardonnay, 20% Viognier Region Adelaide Sub-regions Adelaide Hills Chardonnay, Langhorne Creek Viognier Vine Age 10-15 years WINEMAKING Process Each variety was harvested in the cool of the night when showing their most elegant fruit flavours. Following crushing, the free run juice was separated immediately to retain that freshness, and only that portion was used to make these wines. Fermentation proceeded at cool temperatures around 12-14°C until dry. Blending did not occur until after both wines were stabilised and filtered to show their best varietal characteristics.
