DESCRIPTION Colour Vibrant pale straw with a golden tinge and green edges Aroma Layers of citrus, green apple, guava and pineapple combine with the intensity of peach stone character. Palate A vibrant palate of generous white peach and citrus fruits is entwined with slight cashew flavours. The wine is elegant, yet rich with the natural acidity the major highlight. Varietal Composition 100% Chardonnay – Bernard Burgundy clones Region Adelaide Hills Sub-regions Lobethal/Charleston Vine Age 15-20 years WINEMAKING Process Whole bunches were hand selected and picked in the cool of early evening, then destemmed withoutcrushing , directly into the press. Gentle pressing extracted only the finest quality juice to highlight the elegance of this variety and region. The juice was then fermented in stainless steel tank between 12 and 14°C, and 25% was taken to new French oak hogsheads for the last few days of ferment.
