Cape Barren Native Goose GSM DESCRIPTION Colour Vibrant deep cherry red Aroma The nose is very reminiscent of a bowl of dark berries such as raspberry, strawberry and wild cherry, combined with dark plums and confectionery. Palate Dense black berry flavours initially excite, and then merge into the mocha and chocolate richness of Shiraz. The palate shows great texture and softness, and is very rounded with long persistence. The finish is left with hints of savoury spice and herbal notes. Varietal Composition 58% Grenache, 40% Shiraz, 2% Mourvèdre Region McLaren Vale Sub-regions Blewitt Springs, McLaren Vale, Willunga Vine Age 45-80 years dry-grown WINEMAKING Process Varieties were fermented separately for 8 days in upright static fermenters, with a warm onset at over 30°C for the first 2 days, then at cooler temperatures of around 25-27°C. The wine was pumped over skins twice per day, and was run off skins and pressed at 2 degrees Baume.
