Cape Barren Old Vine Shiraz DESCRIPTION Colour Rich, opulent and inky crimson red Aroma Intense plum and prune aromas are enhanced by complex notes of toasty French oak, lavender and five-spice lift. Palate Seriously old vines produce wines of incomparable concentration and complexity, and this is evident in this 2007 Old Vine Shiraz. Full bodied and richly textured, it offers layers of densely packed dark fruits, olives, chocolate and mocha. The persistent finish is supported by balanced harmonious oak and soft, supple tannins. Varietal Composition 100% Shiraz Region McLaren Vale Sub-regions Blewitt Springs, single vineyard Vine Age 80-85 years WINEMAKING Process Fermentation was carried out for 10 days in upright static fermenters at around 25-27°C. The wine was pumped over skins twice per day, and was run off skins and pressed at 2 degrees Baume. One-third was added to new French oak hogsheads to complete fermentation.
