Cape Barren Native Goose Shiraz DESCRIPTION Colour Deep purple with red edges Aroma Intense aromas of ripe dark berry fruits are accompanied by liquorice, Chinese 5-spice, fine dark chocolate and fertile earth. Palate The same flavour burst of intense berry fruits is also evident on the palate, backed by complex nuances of espresso and the rich round velvety texture of mocha. The finish provides a persistent length of flavour supported by subtle tannins. Varietal Composition 100% Shiraz Region McLaren Vale Sub-regions Blewitt Springs, McLaren Vale, Willunga Vine Age 45-80 years WINEMAKING Process Fermentation was carried out for 8 days in upright static fermenters at around 25-27°C. The wine was pumped over skins twice per day, and was run off skins and pressed at 2 degrees Baume.
